Baking has always been something I've loved. Creating something from scratch then seeing friends and family light up when they eat is the best feeling in the world! I've been baking for a long time, ask my mom, she used to see all the dishes pile up while I just kept going. When I started Wheatless Sweetness most people's reaction was "I was wondering when this was gonna happen." It was no surprise that I wanted to make everyone's day with the best treats I could whip up!

Some ask "why gluten free?" When my sister was diagnosed with Type 1 Diabetes over 10 years ago we all went gluten free to help regulate her (and our) blood sugar. Back then being gluten free meant Almond Flour, Coconut Flour, Xantham Gum, really dry pastries and a VERY limited recipe selection. That's probably why we were only gluten free for a few months. Several years later my sister was diagnosed with Celiac Disease, so we all went back to being gluten free, but this time the GF scene was completely different. So now I get the chance to share with everyone that being gluten free can mean even better pastries than those made with regular flours. Trust me you don't have to be GF to LOVE these goodies!
